Bring 3 cups water and 2 Tbsp. butter to a boil. Add MIX FOR HOLIDAY RICE and 1 cup rice (brown or white), stir well. Cover tightly, reduce heat to low and cook until liquid is absorbed and rice is tender (white – 20 to 25 min., brown – 45 to 60 min.)
1. Use as a stuffing in a roasting chicken or small turkey.
2. A nice side dish for pork, chicken, turkey or beef.
3. Mix cooked rice with vegetable greens and shrimp with vinaigrette, for a nice seafood salad.
HOLIDAY CHICKEN ROLL-UPS
1 package HOLIDAY RICE MIX
4 half boneless, skinless chicken breasts
1/2 cup flour
1 egg, beaten in a shallow bowl
1/2 cup bread crumbs
Cook rice according to package instructions. Allow to cool slightly. Pound chicken breasts, skin side down between 2 sheets of plastic wrap. Take off top sheet of plastic wrap. Turn breasts over and dust with flour. Dip flour side in beaten egg, place back on plastic wrap and pat with bread crumbs. Turn breasts over so crumb side is down and spoon some rice on center of chicken breast. Fold over securing with a tooth pick. Repeat with other 3 breasts. Pour remaining rice in the bottom of a sprayed 9×9” pan. Place the 4 breasts on top of rice and bake in a 350° for 40 to 45 minutes.
BROWN OR WHITE HOLIDAY RICE MIX
Bring 3 cups water and 2 Tbsp. butter to a boil. Stir in BROWN HOLIDAY RICE MIX. Cover tightly, reduce heat to low and cook until liquid is absorbed and rice is tender (Brown – 45 to 60 minutes, White – 20 to 25 minutes)
