Cajun Seasoning



2 Tbsp. celery seed
1/2 cup brown sugar
1/2 cup vinegar
1/4 cup Worchestershire Sauce
2 cup tomato catsup
6 cloves garlic, minced
1 – 2 Tablespoons Cajun Seasoning

Put all ingredients in a saucepan.  Bring just to boiling.  Remove from heat.  Brush on meat while grilling

CAJUN POT ROAST    Makes 6 servings

2 pounds boneless beef chuck roast
1 Tablespoon Cajun seasoning
1 medium onion, chopped
1 rib of celery, cut into 1 inch pieces
3 carrots, peeled and cut into 1 inch pieces
1 – 14 ounce can diced tomatoes, undrained
1 teaspoon hot pepper sauce
1/4 teaspoon freshly ground pepper

Sprinkle Cajun seasoning all over the roast and rub in to completely coat the roast.  Place roast into a 4-6 quart slow cooker. Top with onion, celery, and carrots. In small bowl, combine tomatoes with juice, hot pepper sauce and pepper. Pour over everything in the slow cooker. Cover and cook on low setting for 8-10 hours.
