Dill Vinegar


Peel cucumbers and slice into a bowl. Cover with salt water (1 tsp. salt per 1 cup of water). Soak 3 to 5 hours. Drain off salt water and rinse cucumbers once. Mix equal amounts of sugar and Dill Vinegar. Pour over cucumbers. Liquid should cover them. Marinate at least 1 hour. HINT: EquaL works well also.


1/2 cup sugar
3/8 teaspoon salt
3/8 cup water
14 Tablespoons Dill Vinegar
3/4 teaspoon whole allspice
1-3″ stick cinnamon
6 whole cloves
1 quart small beets – cooked

Combine all ingredients, except beets, in a saucepan and simmer 15 minutes. Put beets in a quart canning jar and pour in liquid and spices over beets and let sit overnight.
