Spinach Dip for Vegetables



Mix contents of package with 2 cups of plain yogurt*,
1 – 10 ounce package frozen, chopped spinach, thawed and squeezed dry.

Refrigerate and serve with raw vegetables. Makes 4 cups.

*I make yogurt cheese by putting the 2 cups of plain yogurt in a strainer lined with a coffee filter and let it drip for about 1/2 hour. What is left in the coffee filter is yogurt cheese. I like to use it in the dip because it doesn’t separate and the flavor is better.

Stir package into chicken vegetable soup.
Stir package into beef vegetable soup.
Stir package into Minestrone soup.
Sprinkle package into beef stew.
Serve dip in a hollowed out loaf of round rye bread. Serve bread cubes made from what you hollowed out with the dip along with vegetables.
