Sprinkle on beef, chicken or pork. Apply thoroughly and evenly on meat. Allow the meat to absorb the flavor of the rub for a few hours or overnight.

BBQ RIBS

5 meaty country-style ribs
Jamaican Jerk Rub
Sprinkle rub on both sides of ribs. Put in pan and cover with aluminum foil. Put in 350° F oven for 1 hour. Remove meat from pan and pour liquid into a small sauce pan and boil until sauce is reduced to the consistency of barbeque sauce. Add the ingredients below to make sauce. Grill ribs brushing with Barbeque Sauce.

BARBEQUE SAUCE
1/4 teaspoon chili powder
1 Tablespoons celery seed
1/4 cup brown sugar
1/4 cup vinegar
2 Tablespoons Worchestershire Sauce
1 cup tomato catsup

Put all ingredients in a saucepan. Bring just to boiling. Remove from heat. Brush on meat while grilling.
